What do RG-58, RG-59 and RG-6 mean on a connector?

The RG number names the coaxial cable the connector is made to fit, so it must match the cable in hand. RG-59 and RG-6 are 75 ohm and carry video: RG-59 for short camera runs, RG-6 further. RG-58 is 50 ohm for radio and antenna leads. Match the number, then the crimp or compression style.
